APPLE CINNAMON FRENCH TOAST BAKE 

1 loaf of your favorite bread
1 apple
2 teaspoons of cinnamon
10 eggs
4 ounces of cream cheese
1 stick of melted butter
1 1/2 cups of half and half
Spray a 9 x 13 baking dish with cooking spray. Cube 1 loaf of your favorite bread and put half into the baking dish. Cut the cream cheese into small cubes and distribute evenly over the bread. Peel and dice one apple and distribute evenly. Add the remaining bread.
In a large bowl beat 10 eggs then add the half and half, 1 stick of melted butter and cinnamon.
Pour mixture evenly over the bread and push down on the bread with a fork until the egg mixture is absorbed evenly.
Bake at 350 for 35 - 40 minutes.

BANANA BREAD

3 ripe bananas
1/3 cup melted butter
3/4 cup sugar
1 beaten egg
1 teaspoon of vanilla
1 teaspoon of baking soda
1 1/2 cups of flour
Mix butter and mashed bananas in a large mixing bowl
Add sugar, egg, vanilla and mix
Add baking soda then flour and mix
Pour batter into a greased 4x8 baking pan
Bake at 350 for 40 - 45 minutes

EGG PUFF

10 Eggs
1/2 cup flour
1 lb of your favorite shredded cheese
1 tsp. baking powder
1 pint of cottage cheese
1/2 cup melted butter
Optional: add herbs and vegetables of your choice
Beat eggs until light and lemon colored. Add flour and all other ingredients, mix. Spray a 9 x 13 baking dish with cooking spray. Pour mixture into baking dish and bake at 350 degrees for 35 minutes. You can prepare the night before and bake it in the morning.

JOSEPH'S CHOCOLATE CHIP COOKIES

Makes 3 Dozen
Ingredients:
1 cup (2 sticks) butter, softened
1 cup brown sugar, firmly packed
1/2 cup granulated sugar
2 large eggs
1 tsp pure vanilla extract
2 Tbsp water
2 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
24oz package of semi-sweet chocolate morsels
1 cup of chopped nuts (optional)
Preheat oven to 350 degrees
1. Beat butter and sugar until light colored and creamy. Beat in eggs one at a time until well blended. Add vanilla and water and blend.
2. Combine flour, baking soda and salt; gradually stir into butter mixture. Stir in chocolate morsels and nuts (if desired).
3. Drop rounded teaspoonfuls onto ungreased cookie sheet, about 2 inches apart. Bake 8-10 minutes or until golden brown. Cool and enjoy!!
